Tasty desserts highlighting whole food ingredients

Raw chocolate cream pie.
CRUST
3/4 cup packed pitted dates 
2 cups pecans or almonds (raw)

Put into food processor and process until it forms a loose paste. Press into a 9” tart pan or pie plate.

FILLING
3/4 cup packed dates
3/4 cup cocoa
1/2 cup full fat coconut milk
1/2 cup cashews 
1/2 cup strong coffee

Soak cashews in coffee at least one hour and up to 24.
Combine all ingredients in the food processor. Process until smooth you may need to add more coconut milk.
Pour into prepared crust and refrigerator for 4 hours or until set.

I am a pastry chef at Malia Mediterranean Bistro in Battle Creek, Michigan.  I am passionate about making delicious desserts free of bleached flour, white sugar, corn syrup, and hydrogenated oils.  I use only whole food ingredients in my desserts at home and in the restaurant.  My recent fascination is the raw food movement, you can create surprisingly tasty desserts using no sugar, butter, or dairy products.
